Cinnamon has been used in cooking for thousands of years and is one of the oldest and most treasured spices in the world. In ancient times, it was highly valued and often presented as a precious gift to monarchs and nobility.

Ceylon Cinnamon vs. Cassia
There are several varieties of cinnamon, but the two most common are Ceylon cinnamon and Cassia cinnamon.
Cassia cinnamon (Indonesian or Chinese cinnamon) is sometimes referred to as “false cinnamon.” It has a darker color, thicker and rougher bark, and a stronger, more pungent flavor. Cassia is also typically much less expensive than Ceylon cinnamon.
Ceylon cinnamon, often called “true cinnamon,” is considered the highest quality variety. It is prized for its delicate aroma and naturally sweet, refined taste.
Authentic Ceylon cinnamon is traditionally produced in Sri Lanka from the thin inner bark of young cinnamon trees. After harvesting, several delicate layers of bark are carefully rolled together to form soft, multi-layered quills. These quills are naturally dried in well-ventilated conditions for several days and can then be easily ground into a fine powder.
Compared with other types of cinnamon, Ceylon cinnamon contains significantly lower levels of coumarin, which makes it a preferred choice for regular use.
